Massaged Kale Salad: basic recipe

1. Remove the stems (you can use these in vegetable stock, or stir fry).

2. Chop the kale. 

3. Sprinkle with salt, add oil and vinegar or lemon juice (this will help break down the kale).

4. Massage the kale with hands.

5. Toss well and add more veggies, dried fruit, or cheese.
