Storage Crops
Storage crops are prized for their impressive ability to hold well throughout the Winter. While it can be easy to think of them as static things, they are still living plants, still respirating and changing. They want specific conditions to hold best and for as long as possible. Over time, in storage, they often begin to sprout and grow root hairs, seeking soil and the chance to grow anew. These sprouts and thin roots can be removed and composted prior to enjoying the vegetables, which continue to be delicious and nutritious.
