Cauliflower and Leek Fritters


Parboil 3-4 small heads of cauliflower for 3 minutes.  Enough to yield 5-6 cups chopped to pea size

Mix cauliflower with 2-3 chopped leeks

Add 3 eggs

Add ¼ cup all-purpose or wheat flower

Add ½ cup cheddar cheese (or more to your liking)

Salt and pepper to taste.

Create desired size patties and fry on medium high until golden brown on each side

Top with horseradish mayo, Tzatziki, or any desired topping.
