Jacquie’s Collard Apple Salad

-1 bunch Collards, stem removed, sliced thin

- 1 TB Lemon Juice

-pinch Salt

Put collard in large bowl, drizzle with olive oil, massage well with hands. Add lemon juice and salt, continue to massage until well blended.

In a food processor or mini chopper, rice the following ingredients: (take care to not puree, working in smaller batches)

- 1-2 Apples  

- Carrots

-Onions/Scallions

-2 fresh Dates     

-Garlic

- Lemon Juice

Add to collard mixture and continue to massaging until all ingredients are well blended.

Serve with roasted squash or potatoes on top!
