- 5-6 Med Potatoes, skin on, washed, cut into bite sized chunks
- 2 Lg Leeks, sliced
- 2Tbs Butter or Oil
- 5-6C Broth
- Herbs, Salt, Pepper, to taste
-1/4C Milk (optional)
Cook leeks in butter/oil until tender, add broth and potatoes. Add Herbs, salt and pepper. Let simmer until potatoes are soft. Remove from heat and blend with immersion blender until smooth. Add milk and incorporate. Enjoy!
